Espresso Oyster Mushrooms on Toast

This is one of our favourite recipes! It’s really simple and you can taste the oyster mushrooms in their full glory. Great on a lazy Sunday morning for breakfast with a pot of your favourite coffee.

  1. Gently tear the oyster mushrooms into bite-sized strips, finely slice the garlic and & shallots. Heat 20mls of olive oil in the pan until it’s really hot, then chuck in the butter until it’s fully melted and starting to brown. Throw in the garlic and shallot, then add the oyster mushrooms and sauté for 1-2 minutes on a high temperature, Season with the, salt & black pepper. Finally, add a dash of balsamic vinegar and cook for a further 10 seconds, then scatter the parsley in. Serve on freshly buttered toast.
